Green Goddess Salad

 Makes 4 small salads.
 ​
Ingredients: 

6 handfuls mixed greens
1 shallot, finely diced
1 teaspoon moringa*
1 teaspoon mustard, dry or wet
​1 1/2 Tablespoons red wine vinegar, sherry vinegar, or Champagne vinegar
1/4 teaspoon salt
5-6 Tablespoons extra virgin olive oil
Fresh herbs: parsley, chervil, marjoram, thyme leaves, basil, finely chopped
Pepper, to taste


Directions 
1. Make a selection of organic greens. Check out the 
TowerGarden for a sustainable economic way to grow at home!
2. Wash and dry them. If not to be used until a later time, roll them loosely in a kitchen towel and refrigerate until needed.
3. Combine the shallot, vinegar, moringa, and mustard and salt in a bowl. 
4. Whisk in the olive oil. Taste and adjust for tartness, adding more vinegar or oil as desired.

oss the leaves with the herbs.

Serve the dressing aside from the salad, OR,
7. When ready to dress the salad, pour the dressing over the greens and toss gently and thoroughly.

* Moringa is a superfood that can be found in your local health food store, ordered online, and sometimes at Whole Foods and CostCo.
